I haven’t always had success with bread making, and it’s only through practice and understanding that I now know what will make a great loaf. It’s so easy to get disheartened when you have put so much time and effort into something and it just doesn’t live up to your expectations. I guess it is essential to start with the basic breads – learn how to make the simple before starting on those that use different flours, need a starter or require a sourdough culture being fed and grown in the fridge for weeks prior to starting. I have included some great recipes in this chapter to get you started, ones that will hopefully ignite, or perhaps reignite, a love affair of bread making. Below are a few tips that I’ve discovered along the way, ones that I hope may be of some help to you.
