Pigeon Peas

Also known as gandule beans or no-eyed peas, or toor dal for the yellow ones, small, sweet pigeon peas are a staple of the Caribbean kitchen, where they are often cooked with rice and spices. They are also commonly found in pantries from Asia to Africa to Latin America.
