The term red bean is used for both dark red kidney beans and a smaller, rounder red bean. Kidney beans have a robust structure that allows them to absorb the flavors of whatever they are cooked with and still maintain their shape, making them a popular base for chili. The smaller red beans are more delicate and milder flavored and are used for bean and rice dishes in both the Caribbean and the American South.
