Because sweet peppers have a strong flavor, they will easily take over the flavor of a mixed vegetable soup. If you want to add them to a soup—strips of different-colored peppers in a tomato or summer fish soup are beautiful to look at—do so near the end of cooking so their flavor doesn’t have a chance to work its way into the rest of the soup.

Roasted peppers can also be pureed in a mortar and pestle or in a food processor and combined with bread crumbs and garlic to make a rouille, which can be used to finish fish and vegetable soups.
