Desiccated coconut, sometimes called macaroon coconut, is dry and fluffy, very finely ground, and similar in texture to cornmeal. It is available sweetened and unsweetened. Often used in candy making or for sweets when a subtle, less obvious coconut flavor, and drier texture, is desired. Desiccated coconut is very popular in desserts and confections from England, New Zealand, and Australia.
