Previously used primarily in large-scale food production, these ingredients are versatile and delicious and are finding their way into commercial and domestic kitchens. The fruits are prepared then freeze-dried, which removes all of the excess moisture while leaving the colour and nutrients intact. The ingredients are fantastic in desserts, cakes and chocolate to add punches of crunch and flavour. The fruits are sold in powder form or in whole pieces. Freeze-drying is an expensive process, but more and more producers are driving prices down. We use the Fresh As brand. These ingredients are becoming more readily available in supermarkets, specialist food ingredient stores, health food stores and online.
