Suave yet wickedly ironic, Carlos Abellan is driven by the pleasure of sharing food with friends. ‘Tapas is about how you eat food,’ he says, ‘it’s about small portions and sharing.’ He wanted to put tapas in a restaurant environment at Comerç24, and it certainly does offer an ultra-sophisticated setting, despite Carlos’ insistence that ‘you can feel relaxed here.’ At the long bar customers perch on upholstered bar chairs to consume nueva cocina tapas that range from modern dishes such as Basil salmorejo with lychees to traditional ones such as Tripe with houmous.
