Chinese Long Beans (Vigna sesquipedalis)

These beans are popular in China and can be found in great abundance in the markets there. They are also known as yard-long beans and can grow to 90 cm/3 ft in length. Not related to short, Western green beans, long beans originated in Asia. There are two varieties: the pale green ones and the dark green, thinner ones. Buy those that are fresh and bright green, with no dark marks. You will usually find long beans sold in looped bunches, and there is no need to string them before cooking. In China, they are stir-fried with meats or with fermented bean curd. They have a crunchy taste and texture like runner beans but cook faster. Store the fresh beans in a plastic bag in the refrigerator and use within four days.
