Garlic Shoots

Frequently you see garlic shoots in China’s markets alongside spring onions and various forms of Chinese chives. These are young garlic shoots before they begin to form a bulb. Harvested early in the spring, they add a delicate perfume and mild, delicate flavours to food which are highly prized among China’s discerning diners. They look a little bit like spring onions and their green tops may also be used as a garnish or flavouring.
