Her name is Judith Vajk; she and her late husband, Hugo, set up the Caledonian Oyster Company in Loch Creran, just north of Oban, but everyone knows her as the ‘Oyster Lady’! Oysters hadn’t been in Judith’s plans when she left school – her mind was set on nursing – but a year in France changed the course of her life. There, she met Hugo, a young Frenchman, who had just started working on an oyster farm in Normandy. On their first date, Hugo took Judith to the oyster farm to show her how to turn oyster bags! They moved together to Herm Island in 1985 and started Herm Island Oysters, and then came to Scotland in 1995 to set up the Caledonian Oyster Company.
