David and Grace Eaton have been making cheese for more than 30 years. They started with a smallholding in Wishaw, Lanarkshire, with a few goats for milk. They sold the milk and also made a crumbly Caerphilly-style cheese in 10-gallon cans for themselves. When they increased their herd of goats – a mixture of all-white British Saanen, the brown-and-white British Toggenburg and the Anglo Nubian – they moved to a farm tenancy in Moffat. A sudden drop in the demand for fresh goat’s milk left them with 400 milking goats and no market so they began to upgrade their personal-use kitchen-style cheese to a handcrafted commercial product. This first commercial cheese, Inverloch Goat’s Cheese, was such a success that David and Grace established the Inverloch Cheese Company.
