Made of hardwood, such as maple, or plastic, such as polypropylene, cutting boards provide a safe cutting surface for dividing dough and protect the knife edge from damage. Cutting boards should be soaked periodically in a disinfecting solution of bleach and water. A worn board should be discarded, as small food particles may become trapped in the uneven cutting surface, making it unsanitary.
