A metal mesh or wire rack, also known as a cooling or dipping rack, used for cooling or glazing baked items. A wire rack speeds cooling as it allows air to circulate around the entire item and, with bread, will ensure a crisp crust. When used during glazing, the mesh allows the glaze to drip off the item rather than pool around it. Racks are available in a variety of sizes, some of which are intended to fit inside full-size or half-size sheet pans.
