In a convection oven, a fan blows hot air through the oven, allowing food to heat evenly and brown more efficiently than in a conventional oven, making it a popular choice for pastry and other baked goods. Convection ovens take a minimum of 15 minutes to preheat to temperature. If a recipe is written with a temperature designated for a conventional oven, the temperature in a convection oven should be reduced by 10 percent.
