This is the machine that every chocolatier would love to have. For use in mass production, it is a good investment. The basic tempering machine automatically melts the chocolate, then allows it to reach and maintain the correct temperature. It alternates heating and cooling while constantly moving the chocolate. More advanced models have accessories for enrobing that include a feeding belt, enrobing curtain, vibrating belt, and cooling tunnel.
