Wire cake racks are essential for cooling cakes, biscuits and other baked goods, so buy the biggest rack you can accommodate, and check that it stands level and is sturdy enough to support a heavy cake. Wire racks for roasting meat are not essential but they hold the joint or bird above the fat in the tin. The most useful rack is V-shaped, and adjustable to hold different-sized joints.
Grilling racks, or grids, consist of 2 layers of thin wire which hold food in between. These enable delicate foods, such as whole fish, to be turned for even cooking without breaking up and are ideal for using on a barbecue.
