Despite the advances of modern appliance technology, many tasks in the kitchen are still done by traditional means. This is particularly true in the way foods are mixed, minced and mashed. Electrical appliances such as blenders, food processors, mixers and beaters can take the hard work out of many everyday jobs, but they cannot entirely replace whisks, sieves, mashers and even the old-fashioned pestle and mortar. The traditional wire whisk, ideally in tandem with a copper bowl, incorporates more air into egg whites than an electric mixer.
