A revelation among often-bland freshwater fish, rainbow and brown trout are found in the clear, icy waters of the Himalayas, where angling tours are increasingly popular.
Rainbow trout do not have scales and are easy to de-bone, so are quick and simple to prepare. The delicious, slightly nutty-tasting pink flesh needs little embellishment, and is best treated simply so the natural flavour of the fish shines through. In northern India rainbow trout are usually coated with a marinade and baked.

Tilapia are a good source of protein.
