Leave marrowfat varieties on the plants until dry and withered. Pull up plants and hang in an airy shed. Shell the peas and store as for seeds in glass jars. For young, sugary peas, blanch them for 5 minutes, drain them and shake off excess moisture. Spread out in a thin layer and dry very carefully, without scorching.
