Resembling radish tops, this delicious green pickled vegetable is remarkably refreshing and crisp. It is often used as a seasoning in stir-fried pork dishes. It comes in small cans and will keep well in a tightly covered jar.
The name comes from its red roots and the fact that it comes up very early in the spring, often visible in the snow.
