A Chinese sand pot will crack if it is put onto heat empty of liquid. It must be at least ¼–⅓ full of liquid when you put the pot on the stove.
A sand pot will also crack if it is exposed to sudden, drastic changes in heat. Have the pot at room temperature and put it on a cold burner to begin. Raise the heat slowly underneath it, beginning with low to warm the pot, then proceeding to medium to bring the liquids to a bubble. Do not remove the pot to a cold or wet surface until it has cooled to room temperature.
