About 45 per cent fructose (similar quantity to table sugar), but it’s one of my favourite natural alternatives if included in moderation in a generally low-sugar diet. The GI is 35, much lower than table sugar. It’s also said to be more nutritious than regular table sugar. It has a delicious caramelly flavour.
