vine physiology, the science of the function of the vine, including the growth and development of the vine shoot and root systems, its fruiting, and the major physiological processes such as photosynthesis, translocation, and transpiration. Physiology is also concerned with controls on plant growth and development, including both environmental and internal control by hormones. Both vine nutrition and degree of water stress are affected by the vineyard soil, and temperature and sunlight are the most important climate influences.
