Good knives make your life easier in the kitchen, whether chopping chocolate or nuts or slicing the fruits of your labours. I like to have a large and a small palette knife with a round end for spreading creams, icings and toppings, but prefer a step-down palette knife when covering a whole cake with something such as ganache. My preferred make is a Mac, which are expensive, but I do also have less-expensive knifes that are just as good for cutting pastry, trimming tarts and general pastry work that is done on a hard surface.
