There will be a decent interval after il primo is finished before il secondo is served. This is usually meat, poultry, game or fish accompanied by one or two lightly cooked seasonal vegetables or a small salad.
Fish from the Mediterranean is famous for its intense flavour, but sadly, because fish is so popular and is considered a healthy food, the waters around Italy are now in danger of being over-fished. There are also many freshwater fish in Italy, and fish farms have recently come into operation. Fish is eaten on a regular basis in Italy, particularly on Friday, because of the strictures of the Catholic religion. I prefer fish cooked simply and accompanied by a flavourful sauce or salsa.
