Though the name conjures thoughts of foods that would be less than appetizing, plain cakes are actually among some of the best ones you can make. They fall into my favorite category of “mix-bake-eat” baked goods and need no fancy or time-consuming finishes to make them good. These are the cakes that you bake when you want to have something to offer last-minute guests, or to indulge yourself and your family with a sweet treat.
