Nowadays, we mostly buy watercress, but I can remember every place I’ve ever found watercress growing wild—what a treat—and I can only imagine how treasured it once was, a wild, free-growing, distinctively delicious green. These days, it’s mostly cultivated; but this doesn’t detract from it’s flavor one bit.
