‘Fortune favours the bold.’ I think of this ancient adage as a call to arms. It has been used throughout Western civilisation to emphasise concepts of courage and bravery. Significantly, it is also the motto of Liverpool John Moore’s University, of which I am Chancellor. It means those who take risks often reap great rewards – or, to put it another way, be brave when making decisions; push the limits of what you can do. It’s a great maxim for life in general, but it’s also one that you can – and should – take into the kitchen.
