We think of Bourke Street Bakery as a community bakery. So many people in the neighbourhood are involved in its success in small but significant ways. So to all of you who help and organise, socialise and suggest, queue patiently while eating sausage rolls and drinking coffee โ€“ we thank you. It is you that has put the bakery on the map and made this book possible.

I must thank a few of the main players. Firstly, my parents, who get up at the crack of dawn each week to travel to Flemington to source the best fruit and vegies, and who are also responsible for the flower arrangements. I love that you are involved with the bakery and can not thank you enough. To my wife, Jessica, the brightest spark in my life. I love my life with you. Thank you for your trust, commitment and belief in me. To our little boy Gideon who keeps everything in perspective, I never realised I could love a being so much.
