Our fermentable recipes will highlight the type of yeast to use, but in most instances these are recommendations, and not set in stone. Wine yeast strains will enhance certain vinous qualities, while many beer and ale yeast strains have been cultivated to provide specific flavours to individual beer styles. It’s best to go with the recommended yeasts if they are available, but even bread yeasts can be used if you are desperate. (These will tend to bring ‘bready’ flavours to your drinks, which may or may not be a good thing; its usually not.)
