A word from Shannon Bennett

It was a proud moment when Darren asked me to consider writing a few comments about his wonderful new book on toasted sandwiches – for several reasons.

First of all he did not need to include the word ‘consider’. It was my honour! – especially given this is a man who worked exceptionally hard early in both our careers as my head pastry chef. To this day many of Darren’s recipes remain on my menus. Second, as a father of six children and partner to a busy professional, I need all the help I can get for great food ideas that are quick, inventive and tasty. This book has the lot.
