The six provinces and one municipality that make up western China are some of the first areas known to be settled in historical China. This culinary history of this land dates back to at least the 5th century bce, since when the land has been inhabited and farmed. It is a fertile part of the country, making it ideal for agriculture, with abundant rain and warm weather. People initially gathered in the most hospitable valleys of the area, and some of these early village settlements became the flourishing imperial cities of later dynasties.
