One of the joys of growing your own herbs is to be able to nip out into the garden to gather a handful of leaves, and to return indoors to create the freshest, most delectable salad ever.
Rocket leaves, a few sorrel shoots and some sprigs of chervil, fennel and claytonia are all that you need as a base. For a dressing, combine a few leaves of tarragon, coriander, basil and lemon balm and snip some chives and parsley into a garlic-flavoured oil blended with a little elderflower vinegar. Toss everything together and delight in the end result.
