Once beguiled by the charm of fresh herbs, most people are understandably reluctant to forego herbal fragrance and flavour for up to half a year when outdoor supplies are unavailable. Consequently few herb lovers exist without a pot or more of their best-loved herb perched on the kitchen windowsill or nestling amongst other houseplants in a porch, hallway or conservatory.

And gardening cooks who depend upon the vitality and rich variety of flavours that freshly-picked herbs bring to their cooking are naturally keen to extend the season of these plants and, where possible, ensure a year-round supply.
