All I can say about your vegetables is : don’t overcook them. I think it is much more important to cook one vegetable perfectly, rather than several badly because you are too busy. I buy the smallest sprouts I can find, prepare them the day before - but cook at the last moment for 5-6 minutes only so that they are still slightly crisp and bright green. It is now possible to buy circular steamers which expand or contract to fit any size saucepan. Vegetables cooked in this simple way taste much better and the goodness doesn’t seep away into the water.
