Pho is Vietnam’s favourite noodle soup. Street vendors selling bowls of freshly prepared soup are a common sight on the country’s roadsides. The fresh rice noodles, called banh pho, are usually rinsed in boiling water and put in bowls. Boiling broth is poured over them, and then slices of raw beef, herbs such as Vietnamese mint and coriander, and bean sprouts and chilli are added to the bowl by each customer.
