Game are wild animals and birds that are hunted for food, traditionally during particular ‘seasons’. When a meat is described as ‘gamey’, it is usually dark, lean and strong-tasting. The most popular small game animal is rabbit, with venison the favourite large game meat. The traditional venison casserole (below) features cloves, juniper and allspice — all robust flavourings in their own right to balance the strongly flavoured meat.
