Great steaks come from the same cuts as great roasts, as well as from other cuts. As with selecting roasts, choose steaks according to how you will be serving them, the size of your guest list, and your budget. One of the best ways to serve steak is to buy a steak large enough for two, four, or even six people, and then carve it at the table. The effect is not only memorable and elegant, but the meat also tastes better.
