Pork is one of the most savory and least expensive of all the meats. It can be prepared much like veal, though unlike veal, which provides cuts from the leg, pork legs are generally used to make ham. When most people prepare pork, they cook chops or perhaps roast or grill a loin. But they are missing out on the superb rack of pork—essentially the loin with the rib bones still attached—which looks more dramatic at the table than a loin and has more flavor. Many also forget the delights of fresh roast ham, which is just a leg of pork, a large cut that is ideal for serving a crowd.
