Guava, by itself, is a flat flavor. But if you combine guava and a white wine like Gewürtztraminer, the whole flavor is completely different. I found that out because once I was drinking a glass of Gewürtztraminer and there was some guava purée on the same table, and I decided to make a spritzer out of it—and it tasted so good! —Dieter Schorner
