It hadn’t quite struck me how varied pudding, pies and tarts were until I embarked on all this; I’ve got a wonderful gingham-print American book called Pie Every Day and sometimes I did feel tempted. But in order not to bombard you with suggestions, I’ve curtailed my selection here: these are my absolute favourites (for now, at least). Anyway, the whole point is that once you’ve played around with some of the ideas in this chapter, you will find it easy enough to make substitutions and changes of your own.
