All national Russian beverages are exclusive to the cuisine. They may accompany meals or be drunk by themselves. Berry juice mixed with water is popular, as are juices made from raisins. Both types are allowed to reach a stage of slight fermentation. Kvass is the most popular drink of all, and there are scores of different types.
The essence of kvass preparation is a mixture of water, flour and malt made into a loose dough or mash, which then undergoes fermentation. This fermented substance is then mixed with more water and yeast, sugar and other aromatic and flavouring additives and allowed to ferment further. The flavouring generally consists of fruit or berry juices. These can include blackcurrant, cherry, raspberry, lemon, strawberry, raisin, apple and pear. They can be spiced with ginger or mint.
