Q. Why does my pie dough handle differently at times?
A. Temperature, humidity and atmospheric conditions affect it. In hot, humid weather the dough often is soft; when the humidity is low, it may be dry. Chill soft dough. Add a few drops of cold water to dry doughs (use caution—it’s easy to add too much).
Q. When do you put the filling in the crust for best results?

A. Follow the pie recipe when adding filling to a baked pie shell. Fill 1-crust pie just before baking; a 2-crust pie after the top crust is rolled and ready to be transferred to top of pie.
