Toppings are to pie what frostings are to cake—sweet flavor boosters. Spread slightly warm apple pie with Caramel or Molasses Topping, and see what a remarkable difference that homey country-kitchen taste makes. It gives traditional apple pie an exciting new taste.

Try one of the bake-on toppings—there’s Spiced Crust Topping, for instance, that turns gold in the oven and leaves the pie crisp on top. Or spoon a glistening glaze over an open-face fruit pie for a finishing touch (see the glacé pies in Chapter 3). Ladle a sweet sauce like Vanilla Cream, reminiscent in flavor of homemade ice cream on apple pie—or Fluffy Orange Sauce. Spoon Amber Caramel Sauce over Pumpkin Pie.
