Cans of salmon are at home on farm cupboard shelves . . . insurance for many inviting dishes that can be fixed in a hurry. Salmon pie, for instance. The recipe for our pie comes direct from a Wisconsin kitchen. The crust is biscuitlike and flaky; when baked to a golden brown, it complements the red-fleshed fish.

With this main dish serve buttered corn, broccoli, green beans or peas, depending on what you have in the freezer. A plate of relishes and a sunny compote of canned peaches and apricots complete the meal. How about milk or hot cocoa for a refreshing beverage?
