No wonder Thailand is called the Land of the Smiling Faces – good food makes for happy people! I am always struck by the colours and textures on the plate, the intoxicating aromas, the beauty and exotic elegance of every morsel. As is common throughout Asia, there is an absolute insistence on freshness, and the adoption of some of the Thai practices in Australia has made us more aware and better cooks, I think, giving us a more articulate culinary language.
