For each component requiring any type of complex preparation there is a written recipe, in this book referred to as a component recipe. The most important component recipe in a finished dish is called the main component recipe. In our chicken salad sandwich, the main component recipe is the chicken salad recipe. Recipes for other components of lesser importance are called subsidiary component recipes. In this book, main component recipes are typically placed in close proximity to the finished dish recipes that feature them. However, in some cases you will be referred to another chapter to find component recipes.
