In Germany, where there is so much delicious baking, cookies bring a wide variety of flavors such as lemon, raspberry, hazelnut, subtle liqueur, sweet almond paste, and chocolate. There are many textures, too, and the recipes in this chapter show the range of goods that fall under the classification of cookie. There are, for example, simple Butter Cookies, and then there are the more involved rolled Apricot Nut Cookies, chocolate-dipped Almond Paste Crescents, and two-layer Hazelnut and Jelly Sandwich Cookies. There is even a Gingerbread House recipe that will bring out one’s inner baker and inner builder. When my children were young, I baked a gingerbread house every year for Christmas. The kids, always eager to decorate, were ready as soon as the frosting was dry and the house was stable. The kids had free rein in how they wanted to decorate, and it was nice to see the ideas changing year by year, as they grew older. There are also three brownie recipes: Candied Ginger Brownies (with dairy-free option), Coffee Liqueur Brownies, and Nut Brownies.
