There are few dishes that don’t benefit from the addition of this simple, garlic-enriched mayonnaise. Traditionally served with fish, aioli is also delicious slathered on a sandwich or stirred into a soup or stew. Thin it a bit with a little additional lemon juice or vinegar, and it becomes a salad dressing, one I particularly like with spring vegetables such as baby artichokes, asparagus, and fava beans, though it’s just as mind-blowing alongside super-ripe tomatoes, grilled eggplant, and peppers.
