Tilapia (Cichlidae family) is a more affordable substitute for almost any mild, firm whitefish. Buy it from a reputable source. This is a fish that definitely tastes like what it eats. As a result, farmed tilapia tastes better than wild tilapia because the latter feeds on algae. It’s a versatile fish to prepare. Most of the cooking techniques work: baking, broiling, sautéing, pan-searing, or steaming. Grilling or deep-frying tilapia is not recommended because the meat can be too chewy if you overcook it.
